It is like very fine sand and not like gum or caking flours, which make it easy to bake and cook with. It works great for gluten-free Irish bread and chocolate teff flour cookies. Though it cannot be as tough as gluten and has darker color, it is filling, pleasant to taste, and not expensive when compared to most wheat alternative or exotic flours. Some people have used it to make a very tasteful and healthy muffin as well.
